Kashiwa Damascus kitchen knife-Kiritsuke
High quality kitchen knife at an amazing price! This knife has an interesting handle. Several layers of different types of steel alternate in the structure of the material. These layers are connected by the method of blacksmith welding into a single unit (for this knife, there are 67 layers). We recommend washing, drying and putting the knife away immediately after use. The advantages of knives from this series are extraordinary sharpness and hardness (HRC60±2).
Damascus steel is produced by repeatedly forging, overlapping and reforging several strips of steel with different properties, thus creating a characteristic pattern that has tens to hundreds of layers. Thanks to the grouping of materials with different properties, Damascus steel is sharp and durable for a long time.
One of the best rated VG-10 steels forms the core of the steel. Highly abrasion resistant stainless steel.
V Gold 10 steel is commonly known as VG-10 or sometimes V-Kin-10 (kin is short for "gold" in Japanese). VG-10 is a unique formulation of steel with high carbon content and chromium, vanadium, molybdenum and cobalt content. The steel is specially designed for the highest quality knives used both in the kitchen and in the field. VG-10 is often called a "super steel" because it is designed to retain its sharpness and durability without becoming brittle. Most commonly used in the production of Damascus knives. When steel is used as a core and is folded with another type of steel, the best properties of knives are achieved when, thanks to the combination of two types of steel, they are strong, hard, sufficiently flexible and resistant to corrosion.
